So why not celebrate this Valentine’s Day by making a commitment to using more nutritious foods like vegetables and whole grains, and nuts in your meals? Here are two recipes that fit the bill, both of which are garnished with hearts in honor of Feb. 14. Sweetheart Egg and Avocado Salad 4 hardboiled eggs, peeled and cut into quarters 1 ripe avocado, sliced the leaves from ½ bunch fresh cilantro, washed and dried Lime-Pickled Red Onions (recipe below) Heart-Shaped Tortilla Chips (recipe below) 1 fresh lime, cut into eighths Lime and Chile Salad Dressing (recipe below) Divide the eggs, avocados, cilantro leaves, and onions, between two large plates. Drizzle a few spoonfuls (more or less as desired) of the Lime and Chili Salad Dressing over each plate. Divide the chips and lime wedges between the two plates. Serve immediately. Makes 2 generous salads. Lime-Pickled Onions 1 small red onion, peeled and thinly sliced into rings the juice from one medium lime Toss the onion rings with the lime juice in a small bowl. Allow the rings to macerate for at least ½ hour. Serve immediately, or refrigerate in a tightly sealed container. Heart-Shaped Tortilla Chips 4 corn tortillas oil, such as grapeseed, suitable for frying (if desired) salt (if desired) a small heart-shaped cookie cutter Stack the tortillas. Use the cookie cutter to cut out as many hearts as possible, pushing through all four tortillas at once. If you would like to fry the chips, place a pot on a burner and pour about an inch of oil into it; heat over medium-high until you can see ripples in the oil. If you would like to bake the chips, turn the oven to 375 degrees. If frying, when the oil ripples, add a heart to the pot to see if the oil is hot enough. If the oil sends up small bubbles and the heart begins to turn golden, add more hearts to the pot. Flip...
